I could not decide what meal to make for dinner tonight; I searched and searched and no recipe stood out. Then I remembered the famous words of Ina Garten,”it’s Friday again and Jeffrey is on his way home and I am making him his favorite, chicken.” Ina you are right, Friday night is for roast chicken. I was bad though and didn’t follow a Barefoot Contessa recipe but instead one from Smitten Kitchen. I made roast chicken with a dijon cream sauce to go on top of creamy polenta and classic green beans as a side. I do think Jeffrey would have approved because the pups definitely did.
